Cook-it-yourself: Bread pockets

A nice meal is sure to kick off the day with a great start. So for that, we have brought a little twist to a regular sandwich that you can enjoy at breakfast or any other time. You can use any filling you want and enjoy a nutritious sandwich.

The recipe requires cutting and frying, so adults need to handle that part while children can do the rest.

Ingredients

• 6 slices bread

• 3 cheese slices

• 1 scrambled egg

• 1 shami kebab

• 2 tablespoon chicken chunks/pieces

• 2 tablespoon tomato ketchup

• 2 tablespoon mayonnaise

• Tomato slices

• Onion slices

• Oil for frying

• 1 egg, beaten

Method

Cut the edges of the bread slices and use a rolling pin to flatten the slices. Place three slices on a plate and spread ketchup on each. Fill one with chicken pieces, the next with shami kebab. Use a spoon to crush the kebab a little to flatten out on the slices. Fill the third slices with scrambled egg. Make sure you leave about half an inch from the sides free of the filling as we will be sealing the edges of the slice.

Put mayonnaise on the chicken and shami kebab slices, I prefer the egg without mayo so I didn’t use it, but you can make any modification in the filling that you want. Now add tomato and onion on the chicken and shami slices, put beaten egg on all the edges of the slices.

Cover each with the remaining bread slices and use your fingers to gently press the edges together to seal it well.

Take a non-stick or any other frying pan, use as little or as much oil as you fancy, fry/toast well on both sides. Slice the sandwiches into two and enjoy three different flavours of this special ‘bread pockets’ that are absolutely yummilicious!
