Cook-it-yourself : Carrot mug cake

With fresh and juicy carrots being the blessings of winter, what can be a better way than to warm up with a mug of hot carrot cake? Here is an easy recipe that will be ready in no time, and devoured in even less! Happy eating!

Ingredients

• 1/4 cup flour

• 4 tbsp sugar

• 1/4 tsp cinnamon

• 1/2 tsp baking powder

• 1 tbsp oil

• 1 tbsp milk

• 2 tbsp egg

• 1/2 tsp vanilla

• 4 tbsp carrot grated

Instructions

In a small bowl, combine all the dry ingredients. Now add milk, oil, egg and vanilla essence, mix well so that there are no lumps. Add the grated coconut and mix again.

Grease a microwave-proof mug with oil and pour the batter into it. Now microwave on high for about one minute and 30 seconds.

Sometimes the cake rises a lot but on taking it out it may settle. The cake should come off easily on a plate but if it doesn’t, you can gently use a knife to pull away the sticky edges.

Top with anything you fancy. I used strawberry syrup, but you

can also use honey, cream, even fruits or simply more grated carrots.
