Ingredients

For cake:

• 1 tablespoon oil

• ¾ teaspoon lemon zest

• 1 tablespoon lemon juice

• 2 tablespoons sugar

• ½ teaspoon vanilla

• 2 tablespoons milk

• 4 tablespoons flour

• ½ teaspoon baking powder

• Pinch of salt

• For the topping:

• 2 tablespoon whipped cream

• Sprinkle of lemon zest

Method

In a microwave-safe mug, mix oil, lemon zest, lemon juice, sugar and vanilla.

Next, stir in the milk. Then, fold in the flour, baking powder and salt.

Microwave for 60-90 seconds.

Top with some whipped cream and lemon zest, and enjoy.
