Mug cakes are ideal to satisfy cake cravings as they are ready in a fraction of the time it will take you to make a regular cake.

This lemon mug cake is full of fresh citrus flavour, very light and fluffy, just suitable for cold winter evenings, to be enjoyed with a cup of tea.

Ingredients

• 3 tablespoons flour

• 1/4 teaspoon baking powder

• 1 egg

• 3 tablespoon granulated sugar

• 2 tablespoons vegetable oil

• 1 teaspoon grated lemon zest

• 2 teaspoons lemon juice

• 1 tablespoons icing sugar

Method

Grease a microwave-proof mug lightly with oil.

In a small bowl, combine all the dry ingredients until well mixed. Add egg and oil, and using a fork, mix well. Add lemon zest and lemon juice and mix until well blended. Pour into the mug and microwave for 70 seconds.

Sprinkle with icing sugar and enjoy while warm.

Note: It is best to undercook than overcook in case of using the microwave. So do not microwave for long as cakes tend to become dry and hard if they are overcooked in the microwave.
