Coffee mug cake

Ingredients:

• 1 egg

• 2 tablespoons milk

• 1 tablespoon oil

• 3/4 teaspoon instant coffee granules

• 1 teaspoon of hot water

• 4 tablespoons plain flour

• 1/4 teaspoon baking powder

• 4 tablespoons sugar

• Pinch of salt

Method:

In a bowl mix together the egg, oil and milk. Dissolve the coffee granules in the hot water and add into the wet ingredients.

Add in the flour, baking powder, sugar and salt, and use a fork to whisk well until no lumps are left.

Grease a microwave-proof mug. You don’t have to grease it but I do as it becomes easy to take out on a plate and serve if I want to, and also lift from the side to check if well cooked before serving.

Transfer the batter in it and microwave for two minutes, lift from the side to check if it is cooked through, if not then you can cook for 20-30 seconds more.

I simply sprinkled some granulated sugar on top, you can use anything you like, such as fresh cream, chocolate topping, fruits, etc.
