• 1/2 cup or 8 tablespoon plain flour

• 1/2 teaspoon baking powder

• 1/8 teaspoon of baking soda

• Pinch of salt

• 6 tablespoon milk

• 2 tablespoon vegetable/cooking oil

• For topping:

• Pinch of dried or powered oregano

• Grated cheese – mozzarella or cheddar

• Pizza sauce or chilli garlic sauce/ketchup

• Chopped chicken chunks (cooked)

• Chopped onions

• Chopped capsicum

• Tomatoes sliced or chopped

Method:

In a bowl add flour, baking powder, baking soda and salt, and mix it well. Now add milk and oil and mix everything well. It will now form a sticky dough. You can now leave it to rest for 10 minutes so that the baking powder and baking soda works on the dough and it will be soft and rise well when you cook.

Now grease a large cup or a small bowl and put the dough so that it covers the bottom. The dough will be sticky and uneven, but it doesn’t matter.

Now spread ketchup or pizza sauce on top, I used chilli garlic sauce. Now sprinkle the onions, capsicums, tomato slice, pinch of oregano powder and chicken. I used chicken tikka chunks.

Pop it in the microwave and cook it for at least two minutes. The cheese will melt by then but the base might not be well cooked and fluffy, so you can take it out and lift the side with a fork or knife and check. Cook again for about 30 seconds, if needed. Cooking time depends on the microwave and if you do cut a slice and feel the dough needed to be cook some more, pop it in the microwave again for the extra seconds, but not up to a minute as it will then burn.

Sprinkle chilli flakes on top if you are adventurous!
