**Cooking our spices, without burning them!

We have a habit of overheating our pans and then adding the spices. This causes the spices to get burned, and instead of giving their rich aromas, they lose their flavor. To avoid this, add a little water to the pan to help cool it sufficiently to prevent the powdered spices from burning.

Is your dish too oily?

If your dish has become too oily, add a little chickpea or gram flour to help absorb the oil and make the gravy thick.

Oops! Added too much salt by mistake? If your dish has become too salty, remove the meat and vegetable pieces and add pieces of potato and cook in the gravy till they become soft. Then, add the vegetables and meat back. Potatoes generally absorb the salt from your dish. You can choose to remove the potatoes or keep them added according to your taste and recipe.
