I love chocolate, as I am sure many of you do too. But I am not always in the mood for the dense, bittersweet, earthy flavour of brown or dark chocolate. In that case, when I still want chocolate, I look for recipes with white chocolate, which is silkier and sweeter and easily adopts the other flavours added to it.
So fudgy lemon blondies were what I made the other day. They’re not just a delight for the sweet and slightly tangy combination of flavours they offer, but their texture makes you want to linger over each bite, enjoying the slight crunch before sinking your teeth into the soft, fudgy centre.
And the best part? They are quite simple to make and don’t require any fancy ingredients or complicated steps. So, the next time you’re in the mood to bake something different from the usual brownies, give these lemon blondies a go!
Ingredients

• 312g flour
• 300g sugar
• 225g butter
• 200g white chocolate, chopped
• 2 eggs
• 1 egg yolk
• 2 tablespoons lemon juice
• 1 tablespoon lemon zest
• 1 tablespoon cornflour
• 1 teaspoon baking powder
• A pinch of salt
Method

Preheat the oven to 180°C and line a square baking pan with baking paper.
In a medium-sized bowl, mix the flour, cornflour, baking powder and salt.
Melt the butter and add half of the chopped white chocolate, stirring until combined. Whisk in the sugar, eggs, egg yolk, lemon zest and lemon juice until well combined. Fold the dry ingredients into the wet mixture, then stir in the remaining white chocolate.
Pour the batter into the lined baking pan and bake at 180°C for 30 minutes, or until a shiny top forms. Allow to cool before cutting into squares. Enjoy!
