Cook-it-yourself: Strawberry blondies

Baking isn’t as hard as many people believe. If you can follow instructions well, know your maths to measure the ingredients correctly and love sweet treats, you can bake anything.

But not to make things very complicated at the start for young cooking enthusiasts like myself, I am sharing a very easy and totally delicious recipe for strawberry blondies. This classic treat is bursting with flavour and can be enjoyed without any topping, but I melted some white chocolate, covered the top with it, sprinkled some chopped strawberries over it, and left it to set. And there it was — a perfectly baked treat that could give any popular bakery bar a run for its money!

I used frozen strawberries, but you can wait for fresh ones to arrive before making this, or substitute them with cherries, which are in season right now.

Here is how to make it:

Ingredients

• 100g diced frozen strawberries

• 100g brown sugar

• 100g granulated white sugar

• 150g flour

• 1 egg

• 115g butter (unsalted, melted)

• 1 tsp vanilla extract

• A pinch of salt

Method

Preheat the oven to 180°C so it is hot and ready.

Dice the frozen strawberries into little chunks and keep them aside.

In a large bowl, whisk the melted butter and both sugars together. Add the salt and stir until well combined.

Now add the wet ingredients: add the egg and vanilla extract, then whisk the mixture until it is completely smooth.

Stir in the flour and mix until it is fully incorporated into the batter.

Frozen fruit tends to be very tender, so fold in the strawberry chunks gently so that the pieces do not become crushed and mushy.

Pour the batter into a lined baking pan. Tap the pan very lightly so that the batter settles evenly. Bake for around 30 minutes, or until the edges are a beautiful light golden brown and an inserted toothpick comes out clean from the centre. The timing may differ depending on the oven.

Remove the pan from the oven. When the blondie has cooled, melt some white chocolate over a double boiler or in the microwave. Cover the top with a smooth layer of melted white chocolate, scatter some strawberry pieces on top, then place it in the freezer to let the chocolate set. Cut into bars and enjoy!
