Bananas are among the most versatile fruits you can find. They’re available all year round and packed with natural sweetness.

The best part? Even when they turn overripe and spotty, you don’t have to throw them away — that’s when they’re perfect for baking!

With just one banana and a few simple ingredients, you can make a soft, chocolatey banana cake in a mug, ready in minutes and made right in your microwave.

This single-serve dessert is quick, warm and comforting. It’s perfect for when you’re craving something sweet, but don’t want to spend hours baking or end up with a pile of dishes. All you need is one mug, one spoon and a little magic from the microwave.

Method

  1. In a microwave-safe mug, mash the banana until completely smooth.

  2. Add the oil, honey, egg and vanilla, and stir until well combined.

  3. Mix in the flour, cocoa powder, baking soda, cinnamon and salt. Stir gently until just combined — don’t overmix.

  4. Sprinkle chocolate chips or chunks on top for an extra gooey texture.

  5. Microwave for about 1 minute 30 seconds to 2 minutes, depending on your microwave’s power.

  6. Let it cool slightly before digging in. Top with chocolate shavings, a drizzle of honey, or even a scoop of ice cream if you’re feeling fancy.

Soft, chocolatey and bursting with banana flavour — this little mug cake is the perfect way to turn an overripe banana into a warm, delicious treat in minutes!
