Cook-it-yourself: Cold fruit salad

Fruits are very nutritious, but some people do not eat fruits as much as they should. But if make something very different and interesting out of fresh fruits, everyone will be tempted to taste a few spoonfuls.

Like always, I am sharing a very easy recipe that anyone of any age can put together, without needing to do any cooking and come up with something totally mouth-watering.

It’s a cold fruit salad, with lots of fruits, but also cream, honey and everyone’s favourite ingredient mayonnaise. For some variation, boiled pasta/macaroni has been added, you can also all boiled potatoes, some fresh vegetables such as carrots and cucumbers. The choices are limitless and totally up to you, whatever you want to have.

So let’s get started and see how you can make it.

Ingredients

1 cup boiled macaroni

1 large pomegranate, peeled and seeded

1 cup apple, cubed

1 cup grapes

½ cup mayonnaise

½ cup/packet fresh cream

2 tablespoon honey

½ teaspoon black salt (kala namak)

Method

Cut the apple into small pieces. In a large bowl, mix mayonnaise, fresh cream, honey and black salt (kala namak). Add all the fruits and combine. You need to adjust the amount of mayonnaise and cream according to the quantity of the ingredients, just make sure it is nicely coated.

Line a Bundt pan or pudding tin with cling film in a way that the corners are coming over the edge of the tin. This is to make it easy to remove the contents easily without spoiling the shape.

Pour half the fruit mixture into the tin and press firmly with the back of a spoon to make it set well at the bottom of the tin. Now add the rest and press well again. Cover with cling film and freeze for 2 hours or leave longer in the fridge to set.

To plate, take it out and gently pull the edges of the cling film on the sides of the tin. Once it is dislodged, place the platter over it and turn over. Gently remove the tin and the fling film. Garnish with fruits and serve cold.

I only used the larger red grapes for decorating because they have piths and mixing it in the salad will make it an uncomfortable experience while eating. You can add other fruits such as guava, pineapple, kiwi fruit, etc. But it is best to use only fresh fruits as canned fruits tend to leave a lot of water and, of course, are not as nutritious.
