Cook-it-yourself: Mango shots

The world’s first laboratory must have been the kitchen where experiments took place and all kinds of inventions happened. The kitchen is definitely my place to experiment with different ingredients and recipes, all designed to suit whatever I am in the mood of having at that moment.

Since mango is my favourite flavour these days, I am using it again to make something very simple and easy (like always). And yes, you can modify the recipe (which really isn’t a recipe) in any way you like and with any ingredients you want.

Mango shots, as I am calling it, are the easiest things to make, rather assemble as I simply used ready-to-eat things, except the jelly which I had to make, that I just put one on top of another in a dessert serving bowl.

I am going to show you the two ways I layered all the ingredients as both are going to give a slightly different texture-cum-taste, but both were simply divine! You can layer it in a different way if you want.

With just store-bought plain cake, mango-vanilla ice cream, mango chunks and mango jelly, made according to the instructions on the packet, the recipe of this delightful dessert can’t get easier than this. And this is very handy to serve when there are surprise guests and you want to impress them without much effort.

Cream can also be used here, as it is used in similar recipes I have come across and the one I made a little earlier, but I felt that with ice-cream already in it, cream is going to get too heavy so I didn’t use it. You can, of course use any other ice-cream flavour and fruits.

Ingredients

• Half a bar of ice cream (mango or any flavour)

• Chunks of two large mangoes

• 1 packet jelly (mango or any flavour)

• Plain cake, cut into pieces

Method

Make the jelly according to the instructions on the packet. When cool and set, cut it into pieces.

Take dessert bowls and start layering them in any sequence you want, but do keep the ice cream for the second top layer.

I layered one bowl with plain cake first, then jelly, ice cream and finally mango chunks. In the other one I first put the mango pieces, then cake pieces, then ice cream and finally the jelly.

The ingredients were enough to make four mango shots and were a great surprise and hit when I served them.
