Cook-it-yourself: Quiche in a mug

With so much to do in life, who has the time to spend hours in the kitchen? And you don’t have to be devoted to cooking to know how to make something totally delicious. I enjoy cooking on my own terms and so I like to experiment and try out things that are super easy and quick to make, and great-tasting too.

This weekend I tried a simple quiche recipe. A quiche is a savoury egg custard, usually with a crust, mixed with some meat, vegetables and cheese or cream and baked in the oven. I made it without a crust, and added whatever was available and cooked it in the microwave. I love experimenting with recipes as cooking is no fun if you don’t add a twist to it. So check out this easy and mouth-watering quiche recipe that takes only 90 seconds to cook!

Ingredients

• 1 egg

• 1 1/2 tablespoons milk

• Salt, to taste

• Ground black pepper, to taste

• 1/2 bread slice

• 2 tablespoons cheese

• 2 tablespoons cooked chicken tikka chunks

• Fresh spring onions, chopped chives

Method

Beat egg and milk together with a fork in a cup, add salt and pepper to taste. Tear bread into dime-size pieces; stir in. Add cheese and chopped cooked chicken tikka chunks, mix. Sprinkle spring onions on top.

Microwave for about 1 minute 30 seconds. Garnish with anything you like, or have it just as it is, like I did. This is only for one serving.
