Red pepper chicken

Ingredients

Chicken wth skin ½ kg


Easy and quick cooking recipies using beef, chicken, fruit and veggies


Green chillies 6

Garlic paste 1 tbsp

Green onion 1

Corn flour 2 tbsp

Oyster sauce 2 tbsp

Red chilli powder 1 tbsp

Black pepper powder ½ tbsp

Salt to taste

Oil 2-3 tbsp

Oil for frying

Method

Beat chicken with a mallet to flatten and make it thin. Marinate the chicken with garlic paste, salt, red chilli powder and corn flour half an hour. Deep fry the marinated chicken and keep aside.

Chop the green chillies in julienne shape and, in a separate pan, fry them till the colour changes. Then add green onion, oyster sauce, black pepper, salt with a cup of water, and cook until veggies are cooked but crunchy.

Add chicken to veggies.

Add corn flour in some water to thicken the gravy. Turn off heat and serve.

Sweet fried rice

Ingredients

Boiled rice 300gm

Pineapple 1 tin, chopped

Cocktail fruit 1 cup

Eggs 2

Raisins 50gm

Oil ¼ cup

Black pepper powder ½ tbsp

Soy sauce 2 tbsp

Sugar 4 tbsp

Salt to taste

Method

Preheat the oil and fry eggs like scrambled eggs. Add fruit cocktail, pineapples, raisins and sugar and let it cook for two to three minutes. Then add the boiled rice, salt, black pepper and soy sauce and cook on high temperature. Mix well.

Sweet fried rice is ready to serve.

Dry green fish

Ingredients

Fish fillet ½ kg

Lemon Juice 3 tbsp

Salt To taste

Black pepper powder ¼ tsp

Oil 3-4 tbsp

Bread Crumbs 2 tbsp

Garlic paste 1 tbsp

Chopped coriander ¼ bunch

Capsicum half

Green chilli 3-4

Method

Marinate fish with salt, pepper and lemon juice. Chop vegetables and add garlic paste. Add half of the quantity in the fish along with the bread crumbs, and put aside the rest.

In a pan add oil and shallow fry the marinated fish till it turn light golden in colour. Now add remaining vegetables. As the fish turns completely golden, squeeze lemon over it.

Yummy dry green fish is ready to serve.

Kebab with creamy sauce

Ingredients

Beef undercut ½ kg

Onion 2 pcs

Green chilli 4 pcs

Coriander ¼ bunch

Butter 2 tbsp

Tomato paste 2 tbsp

Oil 2 tbsp

Salt To taste

Sauce

Milk ¼ litres

Black pepper powder ½ tbsp

Butter 2 tbsp

Fresh cream 2-3 tbsp

Flour 1-1/2 tbsp

Salt to taste

Method

In a chopper, add beef, onion, green chilli, salt, tomato paste and coriander. Chop finely. Shape into finger-sized kebabs.

In a pan, add oil and shallow fry kebabs.

Now in another pan, put butter and flour. Let it melt into paste and then add the milk. When the milk turns thick add fresh cream, salt and black pepper. The sauce is ready.

Spread the sauce over kebabs and serve.
