Ingredients

• 2 cups sugar

• 1-3/4 cups all-purpose flour

• 3/4 cup baking cocoa

• 2 teaspoons baking soda

• 1 teaspoon baking powder

• 1 teaspoon salt

• 2 large eggs

• 1 cup strong brewed coffee

• 1 cup buttermilk

• 1/2 cup oil

• 1 teaspoon vanilla extract

• 1 tablespoon confectioners’ sugar

Method

Preheat oven to 350°F. Sieve all the dry ingredients, except sugar, in a large bowl, and then add sugar.

Next, add in the wet ingredients: eggs, coffee, buttermilk, oil and vanilla extract. Once all the ingredients are combined, you beat the mixture on medium speed for a couple of minutes. The batter may appear thin, but don’t worry — this is what gives the cake its irresistibly moist texture.

Pour the batter into a greased and floured 10-inch bunt pan. The recipe called for the cake to be baked at 350°F for 45-50 minutes, but mine took more than 60 minutes. So the time may vary according to your oven, but once a toothpick inserted into the centre comes out clean, and the cake starts to leave the sides of the pan, it is done.

Allow the cake to cool for 10 minutes in the pan before transferring it to a wire rack to cool completely.

You can use an icing of your choice if you want, or just dust the cooled cake with a sprinkle of confectioners’ sugar, like I did. With a cake as good as this one, one can’t wait to taste it. Whether enjoyed on its own, paired with a scoop of creamy ice cream, or topped with a luscious chocolate ganache, this one-bowl moist chocolate cake is a guaranteed crowd-pleaser.
