Breakfast is one of the hardest meals to eat in the morning rush on school days, but the most important as it gives us the energy we need in the day. Most of us, including myself, do not like to eat anything early in the morning unless it is very tempting.

So keeping this in mind, I experimented with my favourite breakfast ingredients and ended up with a very quick and easy recipe that was so tasty and very filling. Comprising egg, cheese, milk, chicken, bread and a bit of greens, this omelette offers all the nutrition our body needs for a balanced diet to kick start our day.

But you can always experiment with other ingredients you like, such as tomatoes, cooked/boiled potatoes, cooked pasta, sausages, etc. And you can skip anything I have used. One egg can also be used as this one was with two eggs and cheese, so a bit too filing to eat. And the best part is that you can make it all by yourself!

Ingredients

• 2 eggs

• 1 slice of bread, cut into small pieces

• 4 tablespoons milk

• 2 tablespoons cooked chicken tikka chunks

• 2 tablespoons cheddar cheese

• 1 tablespoon spring onions

• 1/8 teaspoon salt

• 1 teaspoon tomato ketchup

Method

Take a large microwave-proof mug or a small bowl. While cooking in the microwave, the mixture tends to rise and some even spilled over so don’t use a small coffee or tea mug.

Break the eggs into the mug and beat it. Add milk, salt, bread pieces, spring onions and chicken tikka chunks, then stir everything well to mix. Add ketchup and cheese on top and microwave for two minutes.

Take it out and let it rest for a few minutes before eating, but do be careful as things made in the microwave remain hot on the inside for long.
