Cook-it-yourself: Mini churros

Crispy, cinnamon-coated churros seem to be one of those treats that you can only get at cafés and food fairs. They may look like a treat that requires serious baking skills, but making them at home is much easier than you might think!

With a few simple ingredients that most already have at home, and a piping bag, you can turn a soft dough into golden, crunchy churros, making it the perfect snack to go for with your tea or coffee anytime.

The best part is watching the simple dough transform as it hits the hot oil, becoming crisp and golden on the outside while staying soft and fluffy inside. A generous dusting of cinnamon sugar adds the finishing touch, giving these homemade churros that irresistible sweet and spicy flavour.

So, get ready to pipe, fry, sprinkle and enjoy your very own batch of this classic treat!

Ingredients:

For the dough:

• 250g water

• 20g milk

• 100g unsalted butter

• 15g sugar

• A pinch of salt

• 140g flour

• 3 eggs + 1 egg yolk

• 5g vanilla extract

For the cinnamon sugar:

• 150g powdered sugar

• 2 teaspoons cinnamon powder

• A pinch of salt

Method:

For the cinnamon sugar, mix the powdered sugar, cinnamon and salt in a bowl and set aside.

In a saucepan, combine the water, milk, butter, salt and sugar. Bring the mixture to a boil, then add the flour and mix vigorously until a dough forms. Cook over medium heat for 2–3 minutes, stirring continuously.

Once the dough is steaming hot, transfer it to a bowl and let it cool for 5 minutes.

Beat the eggs and egg yolk together, then gradually add them to the dough, mixing well until fully incorporated. Add the vanilla extract and mix again.

Transfer the dough to a piping bag fitted with a star-shaped nozzle. Heat the oil in a pan for frying. Pipe the dough onto parchment paper or directly into the hot oil, and fry until golden brown and crisp.

Remove the churros from the oil and dust generously with the cinnamon sugar. Enjoy!
