Cook-it-yourself: Mini apple pies

Craving something sweet, warm and delicious? These mini apple pies are the perfect treat to make at home! Sweet, cinnamon-spiced apples are tucked inside flaky puff pastry, then air-fried until golden and crisp. To make them even more special, they are finished with a creamy vanilla frosting drizzled over the top.

The best part is that you don’t need to make pie dough from scratch. Puff pastry sheets make these pies quick and easy to prepare, while the apple filling takes only a few simple ingredients. Once the pies are filled, folded and sealed, pop them into the air fryer and let them turn beautifully golden.

So, if you love apple pie, but want a simpler version that you can make yourself, grab your ingredients and let’s get baking!

Ingredients:

For the pies:

• 1 cup diced apple

• 2 tablespoons brown sugar

• 1 teaspoon cinnamon powder

• 1 teaspoon cornflour

• 1 teaspoon vanilla essence

• 1 tablespoon water

• 1 egg

• 6 puff pastry sheets

For the frosting:

• 30g cream cheese, softened

• 30g powdered sugar

• ½ teaspoon vanilla essence

• 1–2 teaspoons milk

Method:

In a pot, add the apples, brown sugar, cinnamon, cornflour and vanilla essence. Mix until well-combined. Cook on medium heat until the mixture starts sticking to the pot, then add the water to loosen the mixture. Let it cool.

Add the apple mixture to a puff pastry sheet, but be careful not to add too much, or it will overflow. Fold the sheet over and crimp the edges with a fork. Cut slits on the top and brush with egg wash. Air fry at 180°C for 10–12 minutes. Take the pies out and let them cool.

For the frosting, mix the cream cheese in a bowl until smooth. Then add the powdered sugar, vanilla and milk and mix until well-combined. Drizzle the frosting over the cooled pies and enjoy!
