Cook-it-yourself: Peach cobbler

Juicy peaches are more than fruits to eat or turn into a drink. They can be used to create a mouth-watering warm, buttery dessert you are going to love.

Sweet, cinnamon-spiced peaches are tucked under a buttery cobbler topping and air-fried until golden. And when you add a scoop of cold vanilla ice cream, it’s a perfect treat.

This easy peach cobbler takes just a few simple ingredients and an air fryer to make. And if you do not have an air fryer, you can use a regular oven instead. You can make two individual servings from this recipe.

Ingredients:

For the cobbler topping:

50g flour

50g sugar

1/2 teaspoon baking powder

A pinch of salt

25g cold butter

50ml milk

1/2 teaspoon vanilla extract

For the peach filling:

1 large peach, cubed

1 tablespoon brown sugar

1 teaspoon lemon juice

1/2 teaspoon vanilla extract

1/2 teaspoon cornflour

A pinch of cinnamon

A pinch of salt

Method:

In a bowl, mix the peaches, brown sugar, lemon juice, vanilla, cornflour, cinnamon and salt. Set aside.

For the cobbler topping, mix the flour, sugar and baking powder. Use your fingers

to rub the cold butter into the dry mixture until it forms a crumbly dough.

Stir in the milk and vanilla until combined. Divide the peaches between two ramekins and divide the topping evenly between them.

Air-fry at 170°C for 15–18 minutes, or until the topping is golden and cooked through.

Let it cool before serving. Serve with vanilla ice cream and enjoy!
