Who says lasagne is only a dish you can order in a restaurant and is too complicated to make at home? If you’ve ever wished you could enjoy this cheesy, comforting favourite without making a giant baking dish, your wish has come true!
This single-serve version is super easy to make in no time and is perfect for satisfying those sudden pasta cravings.
With layers of soft lasagne sheets, creamy sauce, flavourful chicken tikka and melted cheese, this mini lasagne packs all the deliciousness of the classic dish into one cosy little ramekin. So, grab your ingredients, keep this recipe in front of you, and get ready to cook up a treat that’s just for you!
Ingredients:

• 2-3 boiled lasagne sheets
• 10-12 chicken tikka chunks
• 6 tablespoons tomato ketchup
• 4 tablespoons mayonnaise
• 3 teaspoons milk
• 1/2 teaspoon black pepper powder
• 1/2 teaspoon garlic powder
• A pinch of salt
• A slice of cheese
Method:

In a pot, add salt and oil to boiling water. Put in your lasagne sheets and wait until they are soft. Stir gently a couple of times to make sure the sheets do not stick together while boiling.
Strain the pasta sheets and put them on a separate plate.
To the ketchup, add the sliced chicken tikka chunks. Next, add the milk and spices to the mayonnaise. This will be your ‘white sauce’.
Take a heat-safe ramekin and start by spooning in some of the mayonnaise mixture. Place one of the lasagne sheets on top. Then spoon in both the meat sauce and the white sauce.
Fold the lasagne sheet over and repeat the process until the ramekin is filled to the top. Finally, spoon some more white sauce on top and place a slice of cheese.
Air fry at 120°C for around 10 minutes or until the cheese has turned a nice golden colour on top. If you don’t have an air fryer, don’t worry, you can bake it till the top turns golden, or even microwave it, say for a minute, until the cheese on top melts. If you are making it in the microwave, which is easier and simpler, the only difference will be that you will not get a nice crusty brown topcoat as in an air fryer or oven, but it will still taste as good.
