Chinese-styled chicken

Ingredients

Chicken ½ kg


With summer here, you need to spend less time slaving in the hot kitchen and eat lighter, healthier meals that don’t make you feel heavy and bloated. Here is a fish recipe, a Chinese-styled chicken and an easy quiche that make a light luncheon when teamed with a nutritious salad, and also provide a great lunch box option to take to work or school


White pepper powder ¼ tsp

Black pepper powder ¼ tsp

Salt to taste

Ginger-garlic paste 1tbsp

Worcestershire sauce 1tbsp

Oyster sauce 1tbsp

Honey ¼ cup

Cornflour 4tbsp

Egg 1

Green onion 1

Oil for frying

Oil 3tbsp

Water ½ cup

Method

Cut chicken into four pieces. Marinate chicken with salt, pepper and cornflour. Deep-fry the marinated chicken and set aside.

Fry ginger-garlic paste in another pan. As the ginger-garlic turns golden, add honey, Worcestershire sauce, oyster sauce, salt, black pepper, white pepper and water. Now add the deep fried chicken to this sauce and let it cook with the lid on. After six to eight minutes, thicken the gravy with cornflour. Lastly, add chopped green onion and serve with plain rice.

Fish steak with mustard sauce

Ingredients

Fish (surmai) ½ kilo

Salt to taste

Garlic paste 1tsp

White pepper powder ½tsp

Black pepper powder ½tsp

Mustard paste 1tbsp

Lemon juice 2tbsp

Flour 4tbsp

Oil 2tbsp

Mustard paste 1tbsp

Vinegar 2tbsp

Flour 2tbsp

Salt to taste

Red chilli powder ½tsp

Sugar 1tsp

Oil 2tbsp

Method

Marinate fish pieces with a mixture of salt, lemon juice, white pepper, black pepper, mustard paste, garlic paste, four tablespoon of flour and two tablespoons of oil. Leave to rest for 30 minuts. Fry fish in hot oil.

In a hot pan, put two tablespoon oil, add flour and mix well. Next, add red chilli, salt and mix it well. Add half a cup of water: when it becomes thick, add mustard paste, vinegar, sugar and mix well. Put mustard sauce on fish and serve.

Herb and cheese quiche

Ingredients

Cream cheese ½ cup

Flour 1cup

Baking powder 1tsp

Egg 2

Milk ½ cup

Almond 100g

Black pepper 2tsp

Chopped red capsicum 1

Oregano 1tbsp

Butter 1tbsp

Cheddar cheese 100g

Chopped parsley ½ bunch

Salt to taste

Method

Take one cup of butter, add baking powder and cream cheese, and mix well. Add flour and salt. When the dough is ready, spread it on a tray. Now, in a bowl add chopped red capsicum, chopped parsley, cheddar cheese, egg, milk, almond powder, oregano and black pepper, and mix well. When the mixture is ready spread it on the tray, and put it in the oven for 20 minutes on 180 degree. When it turns golden brown, the dish is ready.
