Hello summer! Hi friends! How are you guys doing in this heat? And how are your exams preparation going? I am having a tough time on both counts, so I need something cold and uplifting to survive the heat and my exams.

And you know where it led me? To making a “Cocomo latte” – a combination of my favourite cookies and a drink I need to keep me going while I study. The good part about coffee is that you can make it both cold and hot to complement the weather, and it is versatile enough to take on other flavours without losing its own unique touch.

This cold, creamy, café-style drink is very easy and quick to make. With layers of chocolate, coffee and a light, velvety foam on top, every sip feels like a rich, smooth treat. So fill up the tallest glass with loads of ice cubes, pour in your Cocomo latte and chill out on hot days.

And before you start wondering, yes, you can substitute it with any other chocolate-filled cookie, or any other flavour you fancy. This recipe is for one large glass.

Ingredients:

• 50g Cocomo

• 150ml warm milk

• 30g heavy whipping cream

• 1 teaspoon vanilla syrup (can substitute with vanilla extract)

• 1 tablespoon instant coffee

• 1 tablespoon cocoa powder

• 75ml hot water

Method

In a small bowl, crush your Cocomo biscuits. Pour warm milk and let it soak for a few minutes. In a glass, add heavy whipping cream and vanilla syrup.

Whip using a frother to make your cold foam. In a cup, add instant coffee and cocoa powder. Pour hot water and stir until mixed.

In your coffee mug, add ice cubes, your strained Cocomo milk, the coffee mixture, and finally top with cold foam. Enjoy.
