Cook-it-yourself: Chicken malai tikka sub

A lot of readers have requested for recipes of savoury snacks, which makes me delighted since it shows that many youngsters are interested in cooking and that they read my recipes with interest.

Sharing recipes is in this section is always enjoyable and fun, since it gives me a chance to experiment with existing recipes to come up with a method suitable for youngsters to follow on their own in a safe way. But this also limits the kinds of recipes I can share with you all, as those involving elaborate cooking methods on the stove are not safe for you and can become too tricky for new cooks to follow. This makes many savoury food items not suitable for you, kids, to ‘cook-it-yourself’.

But don’t worry, today I have a very easy recipe of a hugely popular item that you all love to eat — a sub sandwich! And I am using ready-to-use items, so that you can independently make it on your own, with very little adult help needed. You will, however, have to ask an adult to help in using the oven, if you are not allowed to operate it yourself.

This sub, or submarine sandwich, is of chicken malai tikka flavour, in which you can add so many other kinds of fillings than the one I have used. The ingredients that remain constant are cream, some tikka masala and either ready-made chicken tikka chunks or get a large chicken tikka from any barbecue shop instead.

The quantity of ingredients can vary, depending on how ‘loaded’ you want your submarine sandwich to be, so mine is just an estimate.

So let’s make this chicken malai tikka sub.

Ingredients

• 1 large garlic bread loaf
• 1 cup chicken tikka chunks, or shredded chicken tikka pieces
• 100g cheddar cheese, sliced
• 1 small onion, sliced
• 1/2 capsicum, sliced
• 50g butter
• 1 teaspoon tikka masala
• 4 tablespoons, or to taste, cream
• 2 tablespoon chilli garlic sauce

Method

Cut the bread loaf from the centre, lengthwise, but not till the end, so that the bread remains joined from one side.

Now mix together the chicken tikka pieces, cream, chilli garlic sauce and tikka masala.

Butter the inside of the loaf. I had garlic butter (made with pieces of baked garlic, crushed) so I used that, you can use any.

Fill the loaf with the creamy chicken tikka pieces, capsicum, onion and cheddar cheese slices.

Brush some butter on top of the loaf too and grill in the oven till the cheese inside melts and the loaf is toasted from the top.
Enjoy while still warm!
