Dry mutton chops
Ingredients
Mutton chops ½ kg
Yoghurt 1 cup
Cumin 1tbsp
Garam masala 1 tbsp
Turmeric powder 1 tbsp
Red chilli powder 2tbsp
Ginger & garlic paste 2tbsp
Salt to taste
Method:
In a pan, pour some ghee, add the ginger and garlic paste, and cook for a while. Add mutton chops, yoghurt, cumin, garam masala, turmeric powder, red chilli powder and salt to taste. Cover the lid and cook for 15-20 minutes. When the meat is tender, turn the flame high and let the water dry out. Heat the grill pan and place the cooked chops on it; grill for 10-15 minutes. Tender and juicy mutton chops are ready to be served.
Badami Tangri
Ingredients
Chicken drumsticks 6
Salt to taste
Red chilli powder 1 tbsp
Lemon juice 3 tbsp
Ginger & garlic paste 2 tbsp
What’s for dinner tonight is a tough call on a daily basis. Once you have your protein figured out, you can teem up your simple meat dish with a rice or vegetable entree or a healthy salad on the side to make a square meal and add a choice of bread for hearty appetites
Ingredients for the batter:
Yoghurt 1 cup
Almond powder 25 grams
Dry fenugreek 1 tsp
Black pepper powder ½ tsp
White pepper powder ½ tsp
Cornflour 2 tbsp
Flour 2 tbsp
Chopped coriander 2 tbsp
Fresh cream 2 tbsp
Thawed butter 3 tbp
Method
Marinate drumsticks with salt, red chilli powder, ginger garlic paste and lemon juice for 10-15minutes.
In a bowl, prepare the batter by adding yogurt, fresh cream, almond powder, cornflour, flour, chopped coriander, dry fenugreek, salt, butter, black pepper and white pepper. Coat the drumsticks with the prepared mixture, and bake in oven for 10-12 minutes at 200C, or until golden.
Squeeze lemon and add garam masala powder over it.
Hot wings
Ingredients:
Chicken wings (with skin) 1/2 kilo
Ginger paste 2 tbsp
White flour 2 tbsp
Cornflour 3 tbsp
Oil 2 tbsp
Egg 1
Lemon juice 2 tbsp
Turmeric 1/2 tsp
Red chilli pepper 1 tbsp
Red chilli powder 1 tsp
Cumin seeds 1 tbsp
Oil 2 tbsp
Coconut powder 1 tbsp
Salt to taste
Method:
Marinate chicken wings with two tbsp lemon juice, ginger garlic paste and salt to taste. Now, add red chilli pepper, cumin seeds, turmeric powder and red chilli powder to the marinated chicken wings. Coat the chicken wings with the mixture of egg, cornflour, white flour, oil and coconut powder; deep fry till golden brown.
Dish it out and serve hot.
