Red velvet cake is a classic that has its own fans. Some people like a super rich fudge cake, if you are one such person, please don’t bother making this one because this is simpler and its favour lies in its simplicity.

This eggless recipe is enough for just one cup, so you can multiply the ingredients when you are making more. But don’t overcook or it will get too rubbery and dry.

Ingredients

• 4 tablespoons milk

• 1/4 teaspoon white vinegar

• 4 tablespoons all purpose flour

• 3 tablespoons granulated sugar

• 1 teaspoon cocoa powder

• 1/4 teaspoon baking powder

• 2 tablespoons vegetable oil

• 1/4 teaspoon red food colouring

• Powdered sugar for dusting on top, optional

Method

In a small bowl, add all the dry ingredients (flour, sugar, cocoa powder and baking powder) and whisk together to blend.

Add the milk, oil and vinegar, whisk and then add the food colour. Whisk until smooth and transfer to a microwave-proof mug.

Cook in the microwave on high for 1 minute and 10 seconds. This recipe will rise and then deflate slightly since it’s being cooked in the microwave. Dust with powdered sugar and enjoy immediately!

You can add chocolate chips or a few drops of vanilla essence too. Fresh strawberries are also a good option if you are in the mood. Of course, a tablespoon of cream cheese to the centre of the batter is going to be yummy too.
