Strawberry mug cake

Ingredients

• 5 tablespoons flour

• 5 tablespoons sugar

• 1/8 teaspoon baking powder

• 1 egg

• 3 tablespoons milk

• 3 tablespoons oil

• 2-3 strawberries, cut into 4-5 pieces, and tossed in flour

• 1/2 teaspoon vanilla essence

Method

In an over-sized mug, add all the dry ingredients and combine with a spoon. Now add the egg, oil, milk and vanilla essence and mix well until there are no lumps.

Coat the strawberry pieces with flour, this prevents it from sinking in at the bottom when you mix it in the batter. Now add the strawberry pieces and mix lightly.

Put the mug in the microwave and cook for one minute and 30 seconds. Insert a knife in the middle, if it comes out clean then it is done but if the mixture sticks to the knife then cook for 20-30 seconds more.

Top it with cream whipped with icing sugar and strawberries, like I did, or anything else you fancy.
