During my childhood, I always wanted a spicy omelette breakfast. It’s a popular Pakistani classic that is not only delectable but also simple to prepare, making it an ideal breakfast option. My mother prepared and served it with the traditional Pakistani paratha. Being fond of the spicy omelette from my childhood, I was inspired to create my adaptation to relive those memories and I’ve created the Spicy Croque Madame with Scallion & Red Bell Pepper Omelette.

This recipe is an exceptional culinary creation that has it all as it blends exotic seasoning that tantalise the tastebuds and awaken the senses, making it a must-try dish for any food enthusiast.

There are many elements involved in the preparation of this recipe that provide a uniquely appetising and delicious dining experience. It is inspired by French cooking and is an adaptation of savoury bread pudding combined with a novel spicy omelette.

While making this recipe, I can play with the interaction of many different ingredients based on my preferences. This fun breakfast idea is all about layering flavours infused in the bread, in the process developing a recipe that is not only reminiscent of the classic Pakistani omelet but with many unique twists. For example, when I am whisking together my novel spicy omelet, I can add red chilli powder, scallions and red bell peppers within the egg-drenched soggy bread. The meaty flavour of the shiitake mushrooms is a great addition, as it has a savoury taste that pairs well with the other ingredients. As a result, the dish becomes more satisfying to the tastebuds.

This savoury dish has everything I can imagine with each bite full of flavour, allowing everyone to appreciate the different tastes and textures you get with each mouthful. It can be a lovely way to start a leisurely weekend, providing an opportunity for the family to not only savour it but also be fully engaged with the origins of the dish. Ingredients:

4 eggs, beaten

1 cup shrimps, extra small, peeled, deveined, tail-off

8 fresh shiitake mushrooms, sliced

3-4 slices challah or brioche bread, cut into bite-size pieces (2-3 cups)

½ cup scallion, thinly sliced

1 tablespoon cilantro, thinly sliced

1 red bell pepper, finely chopped

2/3 cup gruyere or parmesan cheese, shredded

½ cup heavy cream

1 teaspoon red chilli powder or chilli flakes

Salt as needed

Method:

Heat your oven to 400 degrees. Use a medium-sized heavy cast iron skillet greased all over.

In a large bowl, add eggs, red chilli powder and salt. Whisk until well combined. Pour bread, heavy cream, scallions, cilantro, shrimps, gruyere, shiitake and red bell peppers into the mixture. Fold the mixture gently without squashing too much. Now set mixture for at least 15 minutes until the bread gets soggy before putting into the oven to bake.

Bake for 20 to 25 minutes until bread is set and edges have browned. Serve warm.
