Recipe: meat on the menu


Fried gola kabab

Ingredients

1 kg beef, minced

1tbsp red chilli powder

1tsp gram masala powder

2 tsp ginger, garlic paste

Salt to taste

1 tbsp maida or roasted gram flour

½ tsp raw papaya

½ tsp allspice

½ tsp cumin seed powder

2 onions, fried brown, mashed

Ghee as required

Coriander leaves for garnishing

Method

Add all spices in minced meat and marinate it in the refrigerator for at least half an hour. Then grind minced meat in the grinder. Make meat balls. Take a frying pan, put some ghee in it and fry the kababs one by one till they become golden brown. Garnish with coriander leaves and serve hot.

Kakori kabab

Ingredients

1 kg beef, minced

½ tsp raw papaya

1 tsp coriander powder

Salt to taste

½ tsp big cardamom powder

1 tsp cumin powder

2 tsp poppy seed powder

2 onions, chopped

2 tsp roasted gram flour

2 tsp ginger, garlic paste

1 tsp black pepper powder

½ tsp gram masala powder

25 gram butter

½ tsp allspice

1 tbsp red chilli powder

Oil for frying

Method

Add all ingredients in minced meat and marinate it in the refrigerator for an hour. Make cutlets and fry. Serve hot with tomato ketchup.

Bar BQ qeema

Ingredients

1 kg beef, minced

Salt to taste

1 tbsp red chilli powder

½ tsp gram masala powder

½ tsp allspice

1 tbsp raw papaya

1½ tbsp ginger, garlic paste

1 cup yoghurt

2 tomatoes, finely chopped

Oil for frying

For garnishing

Coriander leaves

Green chillies to taste

Method

Add all ingredients in minced meat and marinate it in the refrigerator for two hours. Add some oil in pan and cook the minced meat without water. Fry until the water of minced meat dries. Then roast it and garnish with coriander leaves and green chilli. Serve hot.

Bihari kabab

Ingredients

1 kg beef pasande (fillets)

Salt to taste

1 tbsp poppy seeds

1 tsp allspice powder

1 cup yoghurt

½ cup oil

1 tbsp ginger, garlic paste

2 onions

1 tsp cumin powder, roasted

1 tbsp red chilli powder

½ tsp gram masala powder

2 tbsp raw papaya,

1 pinch zarda colour

Method

Mix all ingredients and a little oil in beef. Marinate it in the refrigerator for two to three hours. Put oil in frying pan and fry beef fillets (pasande) at low heat. After the water is dried and the meat is tender, roast it. Serve with chutney.

Chicken boti kabab

Ingredients

1 kg boneless chicken

Salt to taste

2 tsp vinegar or lemon juice

1 tbsp ginger, garlic paste

½ tsp garam masala powder

½ tsp turmeric powder

1 cup yoghurt

1 tbsp red chilli powder

½ tsp cumin powder, roasted

1 pinch zarda colour

Oil for frying

Method

Make medium size pieces of boneless chicken. Add all ingredients in it and marinate for an hour. Put some oil in a pan and fry chicken pieces till golden brown. Serve hot with raita.
