Egg pakora

Ingredients
6 boiled eggs each cut into 4 pieces
1tsp cumin seed
Salt to taste
1/2 tsp baking powder
1/2 tsp red chilli powder
1/4 tsp black pepper
2 cups gram flour
Water as required
Oil for deep frying


Method:
Mix gram flour, black pepper, baking powder, red chilli powder, salt, cumin seed and water to make a thick batter. Dip pieces of boiled egg in gram flour batter and fry till golden brown and crispy. Serve with chutney.


Chicken pakora

Ingredients
2 cup boneless chicken, boiled
1/2 tsp ground cumin
1/2 tsp thymol seeds
Salt to taste
1/2 tsp baking powder
1 tsp red chilli powder
2 cups gram flour
Water as required
Oil for deep frying


Method
Mix gram flour, thymol seeds, baking powder, red chilli powder, salt, cumin powder and water to make a thick batter. Dip chicken pieces in gram flour batter and fry till golden brown and crisp. Serve with green chutney or tamarind chutney.


Moong dal pakora

Ingredients
1/2cup moong ki dal (finely ground)
1/4 tsp baking powder
6 green chillies finely chopped
1 tsp chilli powder
1tsp zeera roasted and powdered
Salt to taste
Handful coriander leaves chopped
Oil for frying


Method
Take ground moong ki dal and add all the ingredients and mix well, drop a spoonful in oil and deep fry. Serve hot with chutney.


Shami Kebab

Ingredients
1/2 kilo boneless beef cut into small pieces
Salt according to taste
1 cup pre-soaked channa ki dal
8-10 whole dried red chillies
10 black peppers
6 cloves
1 bari illaichi
1/2tsp cumin seed
1 stick of cinnamon
2-3 green chillies
1/2 a bunch of fresh coriander leaves
1 egg
1 medium sized onion coarsely chopped
1 tsp ginger/garlic paste


Method
In a pan put meat, salt, red chillies, chopped onion, black pepper, cloves, bari illaichi, cumin, cinnamon, ginger and 3-4 glasses of water and leave to tenderise on low-medium flame.

Meanwhile, boil the dal separately until soft. When the meat has softened and water has dried completely, add the dal and mix together. Remove from heat and let cool.

Grind and add green chillies egg, and fresh coriander leaves. Form into kebabs and fry. Serve with chutney.
