1/2 kg boneless fish cubes 1 tsp salt 1 tsp pepper 2 tsp lemon juice A pinch of yellow colour
For coating
1/4 tsp cardamom powder 1/2 tsp salt and chilli powder 1 egg 1 cup gram flour 2 tbsp sesame seeds Bread crumbs (optional)
Method
Wash the fish and marinate it with salt, pepper, lemon juice and yellow colour for two hours. To make batter, mix gram flour, egg, salt, chilli powder, sesame seeds, crumbs and cardamom powder in a bowl. Coat the cubes in the batter and fry till crispy. Drain on tissue paper. Serve with yoghurt.
Pasanda roll
Ingredients
1/4 tsp nutmeg powder 1/2 cup oil 1/2 tsp fenugreek powder 1/2 tsp cumin powder 1/2 tsp cardamom powder 1/2 cup cream 1/2 cup tomato puree 1/2 cup vinegar 1 tsp coriander powder 1 tbsp onion paste 1 tbsp green chilli paste 1 tsp garlic paste 2 tbsp butter 8-10 fish pasanda (thinly cut lengthwise) 250 gms yoghurt Salt as required
Method
Marinate the pasanda in vinegar and salt for an hour. In the meantime heat oil in a pan, fry onion and garlic and mix chilli paste along with the dry spices. Add tomato puree, cream and yoghurt. Fill this mixture into pasanda and roll it using toothpicks. Grease the tray and set the roll in it. Bake for 45 minutes. Remove and garnish with ginger slices.
Prawns pilau
Ingredients
1/2 kg rice 1/2 kg prawns 1 tsp cumin seeds 2 onions 2 tbsp ginger/garlic paste 2 bay leaves 6 cardamoms 6-7 curry leaves 50 grams green chilli paste 250 gms potato cubes
Salt to taste Oil as required
Method
Clean and de-vein the prawns. Heat oil in a pan, fry curry leaves, bay leaves, cumin seeds and cardamoms. Add potatoes and prawns with all the other ingredients except rice. Let it simmer. Add two to three cups of water and salt and bring to boil. When it starts boiling add rice and cook till done. Garnish with coriander leaves and red onion slices. Serve with salad.
Fried prawns with vegetables
Ingredients
1/2 kg prawns 2 cups mixed vegetables Salt, pepper, chaat masala and ketchup for seasoning
Method
Clean and de-veins the prawns. Heat oil in a pan. Fry vegetables and put aside. In the same oil fry prawns till crispy, add the vegetables along with seasonings and mix well. Serve hot.
