Over a cup of tea

Paani puri

Ingredients

For puri
1 cup flour (maida)
1/2 cup semolina
Salt to taste
Oil for frying
For paani
1 ½ tsp prepared masala
1 cup tamarind syrup
2 boiled potatoes, cubed
2 tbsp sugar
2 tsp cumin seeds
250 grams chickpeas, boiled
A handful of coriander leaves
8-10 green chillies
Water as required

Method for making puris

Knead flour,semolina and salt together into a soft dough. Cover the dough and keep aside. After 15-20 minutes roll out the dough. With a cutter cut into round shapes with two inches diametre. Heat oil and deep fry the puris.

Method for making paani

Add sugar, chopped green chillies, coriander leaves and cumin seeds to the tamarind pulp. Then add water, salt and paani puri masala to the mixture.

To assemble

Make a small hole in the puris and fill them with chick peas, potatoes and paani.

Puff rolls

Ingredients
30 gms butter
1/4 cup water
1/4 cup flour (maida)
1 egg, beaten

For filling

1/2 cup whipped cream
2 tbsp icing sugar
50 gms melted chocolate
Few drops of vanilla essence

Method

Boil water in a pan, add butter. When the butter melts completely, add flour. Stir continuously with a wooden spoon till the mixture leaves the sides of the pan. Now add beaten egg a little at a time and mix well. Put the mixture in a piping bag and bake in a pre-heated oven at 220°centigrade. After 10-12 minutes lower the heat to 19°centigrade and bake till the puff is golden brown. Make a slit in the center of the puff. Let it cool.

For filling

Fold sugar and essence in the cream, spoon a little in the puff. Apply a thin layer of melted chocolate on top and serve.

Barbecue sandwich

Ingredients

1 tsp ginger/garlic paste
1 cup boneless chicken, cubed
3 tbsp tikka masala
3 tbsp oil
4-6 slices of bread
Juice of one lemon

Method

Marinate the chicken for an hour with all the ingredients leaving the slices of bread. Arrange the chicken on skewers on low charcoal fire and keep brushing it with oil. When both sides are done, remove from heat. Take slice of bread, spread chicken on it and cover with another slice of bread. Serve with fries and coleslaw.

Chicken wings

Ingredients

1/2 kg chicken wings
1/2 tsp salt
1/2 tsp pepper
1/2 tsp red chilli powder
1/2 cup gram flour
1 tsp ginger paste
1 tsp vinegar
2 tbsp Worcestershire sauce
2 eggs, beaten
Oil as required

Method

Prepare batter by mixing gram flour, eggs, a pinch of salt and red chilli powder.

Place the chicken in a bowl and add ginger/garlic paste, salt, pepper and Worcestershire sauce. Marinate for two to three hours. Coat the chicken in the batter and fry till golden brown.
