Spice up your life

BAKED CHICKEN SALAD
Ingredients
2 tbs oil
1 cup thinly sliced celery
1/2 cup chopped onion
1/2 cup mayonnaise
1/2 cup sour cream
1 tbs lemon juice
1/2 tsp salt
1/8 tsp pepper
2 cups chicken boiled and cubed
1/2 cup toasted almonds
6 oz sliced mushrooms
1/4 cup crushed potato chips


Method
In a large pan heat oil at medium heat. Add celery and onion, cook for about four minutes or until tender. Re-move from flame and put in mayonnaise, sour cream, lemon juice, salt and pepper. Stir until well-blended. Add the chicken, almonds and mushrooms and toss to coat well. Sprinkle with potato chips. Bake at 325 degrees Centigrades for 25 to 30 minutes.



BAKED CHICKEN WITH CHEESE
Ingredients
8 boneless chicken (breast halves)
8 slices of cheese
1 can chicken soup cream
1/2 cup milk
1/4 cup sour cream
1 1/2 cups crumbs
1/4 cup melted butter
Mushrooms and green chillies ccording to taste


Method
Place the chicken breasts in a buttered baking dish. Top each breast piece with a cheese slice. Mix the soup, milk and sour cream. Pour the mixture over the chicken and cheese. Top with crumbs. Sprinkle melted butter. Cover with foil and bake at 350 degrees Centigrades for 30 minutes. Then remove foil and bake for another 30 minutes. Decorate with mushrooms and green chillies and serve.



SAUTEED POTATOES
Ingredients
1 kg potatoes
2 tbsps olive oil
4 minced garlic cloves
2 tbs minced parsley
2 lbs minced chives
Salt and pepper to taste

Method
Wash and cut thin slices of potatoes. Wrap in cloth or paper towels to absorb any excess liquid. Heat oil in a large pan and add the potatoes and season them with salt and pepper. Saute for about 15 to 20 minutes or until the potatoes are well-cooked and lightly brown on both sides. Remove from the heat and sprinkle the potatoes with garlic, parsley and chives and toss for proper mixing.



BAKED POTATO
Ingredients
8 small potatoes (cooked and cubed)
1 cup cheese, sliced into strips
1 cup mayonnaise
1 chopped onion
6 slices fried beef
1/4 cup of sliced stuffed olives
Salt and pepper to taste


Method
Combine potatoes, cheese, mayonnaise, onion and spices. Place in a baking pan. Top with beef and olives. Bake uncovered at 325 degrees Centigrades for an hour.



MASALA BHAAT
Ingredients
1 cup rice
50 gms green peas
50 gms potatoes
50 gms brinjals
1 chopped onion
2 tbs chopped coriander
1/4 tsp turmeric powder
2 tsp cumin powder
2 tsp chilli powder
3/4 tsp all spice powder
2 tbsps oil
1 tbsp chopped
2 tbsps grated fresh coconut
2 green chillies
2 tbsps ginger paste
2 tbsps garlic paste
Salt to taste


Method
Cut the potatoes and brinjals into big pieces. Mix rice, vegetables, onion, coriander, turmeric powder, cumin powder, chilli powder, all spice powder, ginger and garlic pastes, salt and oil, and add one and a half cups of water. Cover and microwave on high power for 17 to 18 minutes. Decorate with chopped coriander.
