Spaghetti with curry Ingredients 1 packet spaghetti 1 kg boneless meat or chicken 4 tbsp tomato puree 4 onions 2 tsp red chilli powder ¼ tsp turmeric powder
2 tsp ginger/garlic paste 1 tsp all spice powder Water as required Salt to taste
Oil as required
Method Heat oil, add onions and fry until light brown. Add chicken and the rest of the ingredients and cook until the gravy becomes thick. Boil spaghetti with salt and oil until tender. Strain and pour cold water over it and allow to cool.
Ingredients for curry 250 gms yogurt 3 tbsp gram flour 1 onion 1 tomatoes 6-8 green chillies ¼ tsp turmeric powder 1 tsp ginger/garlic paste Salt to taste Water as required A handful of coriander and mint leaves
For baghaar 4 tbsp oil 1 sliced onion 2 cloves of garlic ½ tsp cumin seeds 6-8 green chillies A dash of onion seeds
Method In a blender mix all the ingredients until they become smooth. Transfer the mixture in a pan and stir continuously until thick.In another pan, heat oil and add baghaar ingredients and fry for a while. Then add to the curry.
To serve In a serving dish first place spaghetti, then curry and finally the chicken. Then garnish with coriander and mint leaves.
Vegetable rice Ingredients ½ kg rice ½ kg boneless chicken or mutton 2 capsicums (diced) 6-8 green chillies (diced) 2-3 spring onions (diced) 250 gms carrots or 1/4 kg (cut into match stick form) 500 gms cabbage (cut into thin slices) 1 cup peas (boiled) 100 gms turnips (optional) 2 tsp Chinese salt 1 tsp black pepper 1 tsp white pepper ½ cup oil 1 tsp H.B sauce ½ cup cornflour dissolved in water 1 cup chicken stock 1 egg Ketchup as desired
Method Fry all the vegetables except green onions. Take out a cup of mixed vegetables for rice and keep aside. Heat oil and fry chicken for two minutes and then cook chicken till it becomes tender. Add all the vegetables, chicken stock and seasonings. Mix vegetables and chicken. Add cornflour paste. Bring to a boil. Boil rice with salt. When the rice is half cooked, strain water. Add vegetables which were put aside for rice. Now in another pan heat oil, make omelette and then cut into thin strips and add to the gravy. In the dish first put a layer of rice, then gravy and finally decorate with ketchup.
Khanum kebab Ingredients ½ kg beef (boneless) 250 gms potatoes (boiled and mashed) 4 whole red chillies 2 inch piece ginger 8-10 cloves garlic 2 eggs Oil for frying Salt to taste
Method Boil beef with red chillies, salt, ginger and garlic till tender. Further mince beef in blender. Mix beef and potatoes. Take a handful of the mixture in palm and press it to make an oval-shaped kabab. Dip in the beaten egg and fry till golden brown. Serve with ketchup.
