Delectable iftari

Onion Rings


Ingredients
2-3 large onions (slice into rings)
½ tsp baking powder
1 cup white flour
1 tsp salt
¼ tsp red chilli powder
¼ tsp black pepper
1 cup water
Oil for frying


Method
Make a thick batter of flour, salt, red chilli powder, baking powder and water. Slice the onions into rings. Heat oil in a deep pan. Dip the rings into the batter and coat them. Fry on low heat until golden brown. Serve hot with tomato ketchup.

 

Crispy mince balls


Ingredients

12 bread slices
250 gms minced meat
2 eggs (hard boiled and chopped)
4 tbsp cheddar cheese (shredded)
1 tsp salt
1 tsp black pepper powder
2 tbsp vinegar
1 tsp ginger/garlic paste
2 eggs (beaten)
Oil for frying


Method
Boil minced meat with salt, black pepper, vinegar and ginger/garlic paste. Cool and add boiled eggs and cheese and mix well. Take a slice of bread and soak in water. Put a bit of the mince mixture into the centre of the slice and make a ball. Repeat this and refrigerate all the balls for 30 minutes. Heat oil in a deep pan, dip each ball into the beaten eggs and deep fry until golden brown. Serve hot.

 

Chicken and mushroom kebabs


Ingredients

1 cup chicken (boiled and shredded)
½ cup cheddar cheese
1 kg potatoes (boiled)
1 tsp ajinomoto
1 tbsp salt
1 tbsp black pepper
2 tbsp soya sauce
10 mushrooms (sliced)
3 eggs (beaten)
1 cup bread crumbs
Oil for frying


Method
In a bowl mix mashed potatoes, salt and black pepper. In another bowl put chicken, cheese, ajinomoto, soya sauce and sliced mushrooms and mix well. Take a small portion of mashed potatoes and in the centre stuff the chicken. Make medium-sized kebabs of all the mixture. Heat oil in a deep frying pan. Dip kebabs into the beaten eggs and then roll them in the bread crumbs. Fry kebabs on low flame until golden brown. Serve hot with tomato ketchup.

 

Falafel


Ingredients

2 ½ cups white chick-peas
2 cloves of garlic (crushed)
2 red onions (chopped)
3 tbsp corriander leaves (chopped)
1 tsp cumin (grounded)
1 tsp corriander powder
1½ tsp baking powder
1 tsp salt
1 tsp black pepper powder
Oil for frying


Method
Soak the chick-peas in water. Then put in the blender and add onions, garlic, corriander leaves, cumin, corriander powder, baking powder, salt and pepper. Blend to make a smooth paste. Put the mixture aside for 30 minutes. Take small portions of the mixture and flatten into small patties. Heat oil in a deep pan. Then fry the falafel until golden brown. Drain on tissue paper. Serve with green chutney or tomato ketchup.

 

Spicy fried chicken


Ingredients
1 kg chicken pieces
1 tsp salt
1 tsp ajinomoto
1 tsp black pepper
2 tbsp Worcestershire sauce
2 tsp chilli sauce
Oil for frying



For the batter
1 cup white flour
½ tsp salt
1 tsp white pepper
2½ tbsp chilli sauce
1 tsp baking powder


Method
Marinate the chicken pieces in salt, pepper, ajinomoto, Worcestershire sauce and chilli sauce. Prepare a batter of flour, pepper, salt, chilli sauce, and baking powder. Batter should be thick. Heat oil in a deep pan. Dip the chicken pieces in the batter and deep fry until golden brown or tender. Serve hot.
