Something fishy

Butter sauce fish


Ingredients

1 kg fish fillets
Oil to fry
11/2cup chilli sauce
1/2cup lemon juice (to wash)
Marinade with:
3 tbsp lemon juice
2 tbsp garlic
½ tsp salt
½ tsp black pepper crushed
1½ tsp chilli powder


Method
Clean and slice the fish. Wash it with water mixed with lemon. Drain well and marinade the fillets for half an hour. Fry the fish pieces till they are brown and keep them aside.

Cook the chilli sauce until it is thick and creamy. Serve hot with chilli sauce.

 

Fish with white sauce


Ingredients

5-6 pieces fish fillets
1/2 cup grated cheese
Oil to fry
Marinade with:
1 tsp black pepper
2-3 tsp lemon juice
Salt to taste
For white sauce
¼ cup butter
¼ cup white flour
2 cups milk
Salt and pepper to taste


Method
Marinade the fish for half an hour, and then fry it in oil. For white sauce, melt butter in pan. Add flour and cook over low heat. Gradually stir in milk. Cook further for three to four minutes till thick and creamy. Remove from heat and add salt and pepper.

Place a layer of fish in the greased dish. Pour a little white sauce. Repeat layers ending in white sauce. Sprinkle grated cheese.

Bake in oven (180 degrees) till brown.

 

Fish curry


Ingredients

3 medium size fishes (sliced)
1 tsp ginger
2 tsp garlic
2 tsp red chilli powder
¼ tsp turmeric
1 tbsp corriander powder
2 tsp cumin powder
¼ cup vinegar
1 egg
Salt to taste
¼ cup fresh corriander
Oil to fry


Method
Marinade the fish pieces in vinegar and salt and keep it aside for an hour. Make a paste out of the remaining ingredients except the egg. Rub half the paste on the fish slices. Dip in beaten egg and fry golden brown.

Fry the remaining paste in oil. Place the fish pieces in a dish and pour the fried paste on top. Garnish with corriander.

 

Fish kebabs


Ingredients

1 kg fish
1 egg
2 tsp garlic paste
1 slice bread (soaked in water then squeezed)
1 onion (grated)
4 tbsp chopped corriander, mint, parsley
Salt 1½ tsp
1 tsp black pepper
1 tbsp green chillies (crushed)
Oil to fry


Method
Boil fish till cooked. Remove the meat from the skin and bones. Add all the ingredients to the meat and make kebabs. Fry in hot oil. Serve with sauce.
