Chat dishes

Bhel puri
Ingredients:
2 potatoes diced and boiled
1 onion, finely chopped
1 cup daal
1 cup murmura
Few crushed puris
3tbsp green chutney
1/2 cup date chutney
Handful coriander leaves chopped


Method:
Mix all the ingredients together in a bowl, leaving a little of the coriander leaves for garnishing.

Green chutney:
1 bunch coriander leaves
1/2 bunch mint leaves
6 green chillies
1tsp cumin seeds
1 lemon’s juice
/2 tsp ginger/garlic paste
Salt to taste


Method:
Grind all of the above ingredients in a blender.

Date chutney:
125gms tamarind soaked overnight
250gms dates soaked overnight
1tbsp red chilli powder
1tbsp cumin seeds
1/2 tsp ginger/garlic paste
Salt to taste


Method:
Grind all of the above ingredients in a blender.

Aloo choley
Ingredients:
2 potatoes boiled and cubed
1 cup curd
chaat masala to taste
1tsp sugar
1 cup boiled choley
3tbsp green chutney
3tbsp red chutney
Handful coriander leaves chopped
Salt to taste

Method:
Arrange boiled potatoes in a bowl cover lavishly with crushed papri and boiled choley. Spread curd, chaat masala, green chutney and red chutney. Decorate with chopped coriander leaves.

Red chutney:
1tbsp tamarind heaped
2tbsp gurr
1/2 tsp cumin seeds
1/2 tsp red chillie powder
1/2 tsp salt
1 cup water


Method:
Cook all the ingredients till thick. Serve and use accordingly.

Dahee barey
Ingredients:
250gms flour of maash daal
2tsp soda
chaat masala according to taste Handful coriander leaves chopped Water as required
1kg curd
1tsp ground red chillies


Method:
Take flour and soda in a bowl and add a cup of water and make it into a thick paste. Wet your hands and make flour into round shape and deep fry on low flame. Remove and leave to cool, then dip them in cold water with 3tsp salt for an hour. Remove from water, slightly press and spread in a serving dish. Pour curd on top and decorate with chopped coriander leaves and ground red chillies.



Aloo ki kachori
Ingredients:
1/2kg boiled potatoes mashed
6 green chillies chopped
1tsp ginger/garlic paste
Salt to taste
3 tbsp tamarind juice
2 onions roughly chopped
4tbsp coriander leaves chopped
1/2 tsp turmeric powder
1/2 tsp red chillie powder
1 tsp mustard seeds
1 cup gram flour made into batter
1/4 cup oil


Method:
Heat oil, fry onion slightly, add mustard seed, ginger/garlic paste, turmeric powder, red chillie powder, fry a little. Add mashed potatoes and the remaining ingredients. Mix well shape into balls. Dip in gram flour paste and deep fry.
