Daal channa and lauki Ingredients: 1 cup boiled channa daal 1/2 cup oil 2 tomatoes chopped 1/2 cup brown onion 3 green chillies chopped 1/4 kg lauki 1/2 tsp mustard seed 1/2 tsp turmeric powder
1 tsp coriander powder
1 tsp red chilly powder 1 tsp cumin seed 1 tsp salt 1 tsp ginger/garlic paste 1/4 bunch coriander leaves roughly chopped
Method: Heat oil, add cumin seed and mustard seed. Then add brown onions with ginger/garlic paste and all spices, then fry. Add chopped tomatoes and fry well, then add lauki with 1/2 cup water, cover and cook till done. Then add boiled daal and cook on slow flame for 15 minutes. Add green chillies and chopped coriander leaves.
Daal gosht Ingredients: 1 cup channa daal 1/2 cup tamarind juice 1/2 cup oil 6 green chillies chopped 2 onions roughly chopped 2 tbsp ginger/garlic paste 4 tomatoes chopped 3 tsp red chilly powder 1/2 tsp turmeric powder 2 tsp cumin seed 1 tsp coriander powder 1/2 kg mutton 1/2 tsp salt
Method: Heat oil and fry onions till light golden in colour. Add mutton with ginger/garlic paste and fry well for 5 minutes. Then add chopped tomatoes, with salt, cumin seed, turmeric, red chilly powder and coriander powder. Bhuno well, then add three cups of water and allow mutton to get tender. Boil daal together with 1/2 tsp turmeric powder till tender. Cool and blend it and add to the cooked mutton. Add in tamarind juice, green chillies and cook for 15 minutes.
Khatti daal Ingredients: 1 cup masoor daal 1 tomato chopped 1/2 tsp turmeric powder 1 tsp red chilly powder 1 tsp ginger/garlic paste 3 green chillies chopped 1/4 bunch coriander leaves 3 cups water 1 tsp cumin seed 1-tsp garlic crushed 1/2 cup oil 1 tsp mustard seed Few curry leaves Tamarind juice
Method: Boil masoor daal with tomato, turmeric, red chilly powder, ginger/garlic paste and green chillies till tender, and then blend it. Add tamarind juice and 1 cup of water, then cook. In another pan heat oil, add crushed garlic, let it turn brown, then add cumin seed, mustard seed and curry leaves. When brown pour on daal. Garnish with coriander leaves.
Dalcha Ingredients: 1/2 cup masoor daal 1/2 cup moong daal 1/2 cup channa daal 1 tsp ginger/garlic paste 1 tbsp cumin seed 1/4 bunch coriander leaves 1/2 tsp turmeric powder 1 onion sliced 1/2 cup oil 1/2 tsp all spices 1 tsp chilly powder salt to taste
Method: Boil all the daals together with turmeric powder, cool and blend. Heat oil, fry onion till light golden in colour. Add ginger/garlic paste with all spices and bhuno well. Then add in blended daals, green chillies and let it cook on slow flame for 10 minutes. Remove and garnish with coriander leaves.
