BANANA GALORE:
Banana bread
Ingredients
500 gms butter
15 ripe bananas, peeled and chopped
700 gms sugar
750 gms flour
15 gms baking powder
6 eggs
Method
Mix sugar and butter together until light and fluffy. Beat the eggs and add gradually to the creamed mixture. Add the chopped bananas, flour and baking powder and mix slowly. Pour this batter in a baking tray and bake at 180 degrees Centigrade for about 45 minutes or until cooked.



BANANA CAKE:
Ingredients 125 gms butter
200 gms sugar
2 eggs
2 shredded bananas
100 gms almond powder
50 gms cocoa powder
100 gms yoghurt
250 gms flour
1tsp yeast
Method
Mix the sugar and butter together until light and fluffy. Beat the eggs and add gradually to the creamed mixture. Then add flour and whip well. Add the bananas, cocoa powder, yoghurt, yeast and almond powder and mix thoroughly. Pour into a baking tray greased with butter and dust with flour. Bake in the oven at 180 degrees Centigrade for about 45 minutes.



BANANA FRITTERS:
Ingredients
1 ripe banana
100 gms flour
2 tbsp corn flour
2 tbsp icing sugar
2 eggs
½ tsp salt

Method
Put the flour in a bowl and make a well in the centre. Add the eggs and mix well, then add a little water to form batter. Put salt, cornflour and sugar, and whisk well. Cut the banana into two halves lengthwise, and dust the pieces with flour. Then dip them in the batter. Deep fry till they puff up and turn golden brown in colour. Decorate banana fritters with caramel sugar.



BANANA PATTIES:
Ingredients
4 bananas chopped
1 cup khoya
6 tbsp sugar
1 tsp cinnamon powder
2 tbsp fresh cream
1 egg beaten
Samosa strips

Method
In a bowl put chopped bananas, khoya, sugar, cinnamon powder and fresh cream and mix well. Take two samosa strips and put prepared banana filling and fold them into a square, seal the edges with an egg and deep fry in oil.
